KETO HEART SHAPED WAFFLES


Whether you’re celebrating Valentine’s Day or not, there is nothing better than breakfast in bed! Of course many debate what the best breakfast food item is, but NOTHING beats a delicious waffle. And if you ever wake up on the wrong side of the bed, our keto-friendly waffles are bound to turn your day around. Breakfast or dessert...take your pick 😉  This sweet breakfast treat, topped with a scoop of KETO PINT ice cream, is a home run combo for any sweet tooth craving. 

With Valentine’s just a few weeks away, we thought what better way to celebrate than to use a heart-shaped waffle maker. You can choose to do the same or use any waffle maker of your choice! You can also double, triple, or even quadruple the recipe to make enough for your family and friends.

 

Ingredients:

(Makes Two Mini Waffles)

  • 1/4 Cup Almond Flour
  • 1 Teaspoon Coconut Flour
  • 1/8 Teaspoon Baking Powder
  • 1/8 Teaspoon Salt
  • 1 Tablespoon Melted Butter (or a Dairy-Free Alternative)
  • 1 Egg (Beaten)
  • 1/4 Teaspoon Vanilla
  • Food Dye (Optional)
  • Cooking Spray or Butter to Coat the Waffle Maker
  • Keto Pint Ice Cream

Instructions:

Step 1: Plug in your waffle maker and coat with cooking spray or butter.

Step 2: Melt one tablespoon of butter for 15-30 seconds in a microwave. Then set aside to cool.

Step 3: Beat one egg in a bowl—a hand mixer or whisk works best.

Step 4: Mix your dry ingredients in a separate bowl (1/4 cup of almond flour, 1 teaspoon of coconut flour, 1/8 teaspoon of baking powder, and 1/8 teaspoon of salt). 

Step 5: Add the remaining wet ingredients to the egg (1 tablespoon of cooled melted butter and 1/4 teaspoon of vanilla).

Step 6: Mix the wet and dry ingredients together. Optional: Add food dye to the mixture to make your waffles even more festive.

Step 7: Add the waffle mixture into your waffle maker. Because this recipe is quite thick, you may need to use a knife to completely cover the waffle maker.

Step 8: Close the waffle maker and cook.

Step 9: Once finished cooking, remove the waffle and place on a cooling rack or plate.

Step 10: When the waffle is cool enough to eat, add a scoop of KETO PINT on top and enjoy!

Notes: 

This recipe specifically makes two mini waffles in any shape. To make a standard size Belgium Waffle, we recommend doubling or tripling the recipe. You can also double, triple, or quadruple the recipe to make lots of mini waffles for family and friends.

This recipe makes a thick waffle mixture. You may need to use a knife to spread the mixture onto the waffle maker. The mixture also may dry out over time. If you notice your mixture is drying out, melt some additional butter and mix it in. If you prefer a more buttery waffle, double the amount of butter used from the start (add 100 calories and 11 grams of fat to the nutrition facts).

You can use any flavor of Keto Pint on top. our favorites for this recipe are strawberry and peanut butter cupYou can add fruit, sugar-free chocolate chips, food dye, or sugar-free whipped cream to decorate the waffles.

If you use a dairy-free alternative instead of regular butter, the nutrition facts may vary. This will also be the case if you use any kind of add-ins in your mixture or on top of the waffles.
