KETO ICE CREAM SANDWICH: KETO PINT X SIMPLY DELISH COLLAB


Keto Ice cream sandwich

Ingredients:
(Vanilla Pudding Sugar Cookies)
  • 6 tbsp unsalted butter, room temperature
  • 1 cup Truvia sugar-free baking white granulated sugar plus ¼ more for coating cookies
  • 1 egg, room temperature
  • 1 tbsp vanilla extract 
  • 1 box Simply Delish Instant Vanilla Pudding Mix
  • 1 ½ cups keto baking flour
  • ½ tsp baking soda
  • ½ tsp salt

Directions:

STEP 1: Preheat the oven to 350° Fahrenheit and line two cookie sheets with parchment paper. Set aside. In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and sugar. Mix on medium-high speed until fluffy. Add the egg, vanilla extract, and mix until combined.

STEP 2: Change the mixer to low speed and add the dry Simply Delish Pudding Mix, flour, baking soda and salt. Mix until barely combined. Remove the bowl from the mixer and use a rubber scraper to ensure all of the ingredients are combined.

STEP 3:  In a small bowl add additional ¼ cup sugar. Use a standard sized cookie scoop to scoop cookie dough balls. Roll the balls in the bowl of sugar and place on the prepared cookie sheets. Bake cookies, one cookie sheet at a time, in a 350° Fahrenheit oven for 10-15 minutes. Allow cookies to chill and set on the cookie sheet for 10-minutes before transferring to a wire rack to finish cooling completely.

STEP 4: Once the cookies are cool, scoop your favorite flavor of Keto Pint Ice Cream and sandwich between two cookies. Enjoy!
