KETO BROWNIES

At Keto Pint, we love a good comfort food, and nothing brightens our day more than fresh baked brownies. In fact, we love brownies so much we even made a triple chocolate brownie ice cream.

You can also eat these brownies by themselves, with a scoop of Keto Pint ice cream on top, or even crumble the brownie into an ice cream topping.

 

Ingredients
(Makes 9 Brownies)
  • 1/2 Cup Almond Flour
  • 1/8 Cup Coconut Flour
  • 1/2 Cup Granular Sweetener (Swerve, Lakanto Monkfruit, or Allulose)
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Baking Powder
  • 1 Teaspoon Vanilla
  • 1/4 Cup Cocoa Powder
  • 1/4 Cup Melted Butter (Approximately 4 Tablespoons)
  • 2 Tablespoons Sour Cream
  • 2 Eggs and 1 Egg Yolk

 

Instructions

Step 1: Pre-heat the oven to 350 degrees Fahrenheit. Line a 9x9 baking dish with parchment paper. Tip: to get the parchment paper to stay in place, lightly spray the bottom of the dish with cooking spray.

Step 2: Melt 4 tablespoons of butter in the microwave. Then, pour the butter into a mixing bowl.

Step 3: Add 1/2 cup of granular sweetener to the butter and stir together.

Step 4: After making sure the butter and sweetener mixture has cooled, add 2 eggs and 1 egg yolk. Beat the ingredients together. You should see some air bubbles.

Step 5: Mix in 1/4 cup of cocoa powder. Dutch processed cocoa powder is best, but any kind will work.

Step 6: Add 1/2 cup of almond flour, 1/8 cup of coconut flour, 1/2 teaspoon of salt, and 1/4 teaspoon of baking powder. Mix together until fully combined.

Step 7: Lastly, add 2 tablespoons of sour cream and 1 teaspoon of vanilla. You can also add any mix-ins at this time (walnuts, chopped chocolate, etc.). If you do, be sure to adjust the nutrition facts.

Step 8: Pour the brownie batter into your parchment paper lined baking dish. Gently tap the baking dish on the counter to release any air bubbles.

Step 9: Bake the brownies for 20-25 minutes. If you like fudgy brownies, slightly undercook them. Then, allow the brownies to rest in the baking dish after you take them out. This allows the super gooey parts of the brownie to set and become a fudgy texture. If you prefer cake-like brownies, cook them for an extra minute or two.

Step 10: Once the brownies are done baking, carefully remove them from the oven. Allow the brownies to completely cool before you cut them. If you do not wait long enough, the brownies will crumble.

Step 11: Enjoy your delicious brownies with a scoop of your favorite flavor of Keto Pint ice cream!

 

Notes

You can chop up extra chocolate or toss in some chocolate chips into the batter for any even more decadent flavor. You can also add chopped walnuts to the batter.

To be extra fancy, use a vegetable peeler to make chocolate shavings and sprinkle them on top. You can put Keto Pint Peanut Butter Cup Bites or Keto Pint Dark Chocolate Chips on top as well.

If you want to make a chocolate ganache frosting for on top, simply heat up heavy cream in the microwave or on the stove. Pour the heated heavy cream into a bowl of chopped chocolate or chocolate chips and let it sit for 5 minutes. After the five minutes, gently mix the two together until you have a rich and pourable chocolate ganache. It may look strange at first, but just keep mixing until the two are fully combined. The ratio of chocolate to heavy cream is 1:1. For example, if you use 4 ounces of heavy cream, use 4 ounces of chocolate.

Store the brownies in a Ziploc bag or airtight container. We also recommend wrapping the individual brownies in plastic wrap for extra protection. The brownies will last on the counter for about 3 days, in the fridge for about a week, and in the freezer for up to three months.

This recipe pairs well with any flavor of Keto Pint ice cream. Our favorites for this recipe are peanut butter cup, black raspberry, and triple chocolate brownie.
