4 large eggs, room temperature
4 oz cream cheese, softened to room temperature
¾ cup almond flour
2 tbsp monk fruit sweetener
2 tsp vanilla extract
⅛ tsp salt
¼ cup unsweetened almond milk (optional)

1 lb frozen strawberries
2 tbsp lemon juice
⅓ cup monk fruit sweetener
⅛ tsp xanthan gum

For serving

1 pint Keto Pint Chocolate Chip Cookie Dough ice cream
½ cup fresh strawberries, sliced

Instructions for strawberry sauce

Heat a saucepan with the strawberries over medium heat. Pour in the lemon juice and monk fruit sweetener, then stir to combine. Allow the mixture to reduce, stirring frequently to prevent sticking. As you stir, use a spatula to break apart the strawberries.
Slowly sprinkle in the xanthan gum while continuing to stir, being careful to avoid clumping. Stir immediately and thoroughly to ensure even distribution.
Cook the strawberry mixture for approximately 15 minutes, or until the strawberries break down, the liquid reduces, and the sauce thickens.
Once the mixture has thickened, use a hand blender to blend the strawberry sauce into a smooth puree without any chunks. Transfer the prepared sauce to a jar or a container with a spout for easy pouring.

Instructions for crepe

In a large bowl, combine the cream cheese, monk fruit sweetener, and vanilla extract. Mix until the mixture becomes fluffy. Add all the eggs and mix until just combined.
Add the almond flour and salt to the mixture, and mix until everything is thoroughly combined.
Further add the almond milk and mix for another minute. Allow the batter to rest for 4-5 minutes.
Heat a skillet with butter over medium heat. Once the skillet is hot, pour ¼ cup of batter into the center of the pan and tilt the pan to evenly distribute the batter.
Cook the crepe for 2 minutes on each side, carefully flipping it over using a spatula. Once cooked, transfer the crepe to a plate. Repeat the process with the remaining batter.
Place sliced strawberries on one side of the crepe, then fold it in half and fold it in half again, forming a triangle shape. Repeat this process for the remaining crepes.
Transfer the prepared crepes to a serving plate, drizzle them with the prepared strawberry sauce, and garnish with a few scoops of Keto Pint chocolate chip cookie dough ice cream. Serve immediately and enjoy!
