KETO PINT MOLTEN LAVA CAKE


Luxurious molten lava cake for dessert?! Count me in. Scoop of KETO PINT ice cream on top. KE-TASTIC. Super gooey on the inside, creamy ice cream on the top. Get to mixing, and tag us in your chocolatey-creation!

Ingredients:

(Makes One Molten Lava Cake)

  • 2 Tablespoons Hershey’s Unsweetened Cocoa Powder
  • 1 Tablespoon Swerve Confectioners Sugar
  • 1/4 Teaspoon Baking Powder
  • One Egg (Beaten)
  • 1/2 Tablespoon Heavy Whipping Cream (or a Dairy-Free Alternative)
  • 1/2 Teaspoon Vanilla
  • Pinch of Salt (Optional)
  • Cooking Spray or Butter to Coat the Ramekin
  • Confectioner’s Sugar to Sprinkle on Top
  • Keto Pint Ice Cream

Instructions

Step 1: Preheat the oven to 350 degrees Fahrenheit.

Step 2: Beat one egg in a bowl—a hand mixer or whisk works best. We want to make this cake as airy as possible since we are not using any flour.

Step 3: Mix your dry ingredients in a separate bowl (2 tablespoons of unsweetened cocoa powder, 1 tablespoon of confectioner’s sugar, 1/4 teaspoon of baking powder, and a pinch of salt). 

Step 4: Form a well (small hole) in your dry ingredient mixture. Then pour the beaten egg into the hole.

Step 5: Add the remaining wet ingredients to the well (1/2 tablespoon of heavy whipping cream or dairy free alternative and 1/2 teaspoon of vanilla).

Step 6: Mix the wet and dry ingredients together.

Step 7: Spray your ramekin with oil or wipe it down with softened butter. Then, pour the mixture into the ramekin.

Step 8: Bake the ramekin and molten lava cake mixture for 10-15 minutes at 350 degrees Fahrenheit. Be careful not to over-bake the cake or you will not have the ooey-gooey molten lava center. 

Step 9: Place a plate on top of your ramekin and carefully flip it over to release the cake from the ramekin. (Your cake should slightly jiggle if properly baked).

Step 10: Sprinkle with confectioner’s sugar and top with a scoop of Keto Pint. Enjoy!

 

Notes:

This recipe makes one molten lava cake. You can use a 6- or 8-ounce ramekin. If you use an 8-ounce ramekin, the molten lava cake will be slightly shorter in height. You can also double, triple, or even quadruple this recipe to make enough for family and friends.

A molten lava cake is a chocolate cake that is slightly undercooked in order to have a molten center. Watch your molten lava cake carefully to make sure you do not cook it completely through. If you do, no worries. It will still taste delicious! The top should slightly jiggle but be cooked enough for you to flip the molten lava cake without it breaking. 

If you use a dairy-free alternative instead of heavy whipping cream, the nutrition facts may vary. This is also the case for using other brands of unsweetened cocoa powder or confectioner’s sugar.
